baked eggs en tomates
The smell of tomato leaves - the pollinated sap left behind on your fingers. Yellow speckles of days past linked to scent.
Tomatoes: combine with anything and enjoy fully.
baked eggs en tomates | serves 1

1 large tomato
2 large eggs
1 sprig of fresh thyme
olive oil
salt and pepper
Preheat oven to 400 degrees.
Cut the tomato in half, scooping out the seeds and core with a spoon. Drizzle tomato halves with olive oil in a small baking dish and season with salt and pepper. Sprinkle with thyme. Roast until caramelized and bubbly - about 25 minutes.
Crack an egg into each tomato half and season with salt and pepper. Bake until eggs are just set: 7-10 minutes.
