12 days of Christmas | no. 1

After the Thanksgiving turkey has been digested, every day up to 24 December is Christmas.  We deck the halls and walls and stalls - nourishing ourselves with tinsel and tinder.

Step away.  Eat and enjoy the last few weeks of autumn and all 12 days of Christmas. 

on the first day of Christmas...
winter squash slaw | serves 4-6
adapted from New Seasons Market

4 cups butternut squash, shredded
3/4 cups asiago, chopped
2 cups dried cranberries
2 cups honey roasted peanuts
1 cup of your favorite balsamic vinaigrette (Lucini Italia Cherry Balsamic Rosemary dressing)
2 teaspoons chopped rosemary
kosher salt
freshly ground pepper

Peel the butternut squash (or any winter squash of your choice), slice in half lengthwise, and remove the seeds.  Using a food processor, grate the squash into ribbons.

In a large bowl mix squash, cranberries, nuts and cheese.  Toss with balsamic and mix well.  Adjust dressing amount to your palate.  Season with salt and pepper and refrigerate long enough for flavors to brighten.

Delicious served alongside a rare ribeye smeared with creamy blue cheese.
